Summary

Remove erpnext_druckformate from apps.json — it's not an installable Frappe app (no hooks.py, Python package name has hyphens), caused a configurator/migrator crash-loop (ModuleNotFoundError: No module named 'erpnext-druckformate-migrator')
Verified locally: build + fresh site install of the remaining 7 apps (frappe, erpnext, crm, leadscraper, ecommerce_integrations, erpnext_germany, eu_einvoice, pdf_on_submit) works cleanly, no errors
Set CUSTOM_TAG=version-16 in .env, matching build.sh's new default and the actually-built image
Update Projekt.md, README.md, docs/install.md to document the finding

fix(apps): remove erpnext_druckformate, fix image tag 057d933d05

erpnext_druckformate is not an installable Frappe app (no hooks.py,
Python package name has hyphens) — as an apps.json entry it made
configurator/migrator crash-loop with ModuleNotFoundError on every
bench command. Verified locally by building and starting the stack:
removing it from apps.json fixes the crash, and a fresh site installs
cleanly with the remaining 7 apps (frappe, erpnext, crm, leadscraper,
ecommerce_integrations, erpnext_germany, eu_einvoice, pdf_on_submit).

Also set CUSTOM_TAG=version-16 in .env, matching build.sh's new
default and the image actually being built.
